This is a nice change from apple crisp.
Ingredients
4 ripe bananas
1 can (14 ounces) pineapple chunks, with juice
1 mango
1/3 c brown sugar
Topping
3/4 c flour
1 c oats
1/2 shredded coconut
1/2 c brown sugar
1 stick of butter (1/2 c)
1 tsp nutmeg
1 tsp cinnamon
The Preparation
- Preheat the oven to 350 degrees.
- Slice the bananas. Dice the mango.
- Combine the bananas, pineapple (juice, too), mango, and brown sugar in a small bowl. Set aside.
- In a separate bowl, combine the flour, coconut, oats, brown sugar, and spices. Cut the butter into the mixture until it is in pea-sized chunks.
- Pour the banana mixture in a 9" by 9" baking pan.
- Pour the flour mixture on top of the banana mixture. Spread so that the topping is even.
- Bake for 40-50 minutes, until golden on top.
