There are a few recipes here for soft pretzels.

Recipe#1

Ingredients

1 packet active dry bread yeast
1 cup warm water
2 tablespoons soft butter or margarine
2 3/4 cups bread flour
1/2 teaspoon salt
1 tablespoon sugar
5 teaspoons baking soda (for glazing) & 4 cups of boiling water
Coarse salt (if desired)


The Preparation

  • In a large mixing bowl, combine 1 cup warm water and packet of yeast.
  • Mix in 1-1/2 cups of flour, butter, salt and sugar. Mix well.
  • Slowly mix in the remaining cups of flour. When the dough is not very sticky, knead until the dough is smooth (about 5-10 minutes).
  • Set aside in bowl, and let it rise until dough reaches approximately double its original size.
  • Cut the dough into 12 sections. Roll each section into a rope and twist in the pretzel shape.
  • Place on a greased cookie sheet and let rise until double in size.
  • Heat oven to 400 degrees.
  • To make the glaze, boil 4 cups of water. Transfer the water to a ceramic/glass bowl (anything but aluminum).
  • Add the 5tsps of baking soda and stir until dissolved.
  • With a plastic spatula, carefully lift each pretzel from the sheet and lower it into the boiling baking soda solution for 15-20 seconds. This will glaze the pretzels once you bake them.
  • Sprinkle the pretzels with salt
  • Bake for 7-10 minutes.

Recipe#2

Ingredients

1-1/2 Cups warm (105 to 115 degrees) water
1 package dry yeast
1/2 teaspoon sugar
4-1/2 cups flour
2 eggs, beaten
Coarse salt - kosher, sea salt, pretzel salt


The Preparation

  • Mix the water, yeast and sugar together. Stir until dissolved.
  • Mix in flour. Form into ball. Turn out onto lightly floured board and knead until smooth and elastic, about 10 minutes.
  • Place dough in greased bowl. Cover with a towel and let rise for about an hour or until double in size.
  • Punch dough down. Divide into 16 equal portions. Roll into ropes and then twist into pretzels.
  • Brush with beaten eggs and sprinkle with salt.
  • Bake at 375 degrees 12 to 15 minutes or until golden brown.

Ingredients

1 cup whole milk - room temperature
4 tsp sugar
1/4 oz yeast
2 tsp salt
1 tsp shortening
3 cups flour
Pretzel or kosher salt for sprinkling
2 egg whites

The Preparation

  • Dissolve the sugar and yeast into the milk in a large bowl.
  • Add the salt and shortening.
  • Gradually add the flour. When the dough is no longer sticky and is smooth, cut the dough into 16 sections.
  • Roll each section into a rope. Twist into the pretzel shape. Place on a greased cookie sheet.
  • Cover the pretzels with a towel and let rise for an hour in a warm place.
  • Heat the oven to 375 degrees.
  • Brush the pretzels with the egg whites. Sprinkle with salt.
  • Bake for 10-15 minutes.
